For the Rice
- 2 cups basmati rice
- 4 cups water
- 2 bay leaves
- 3 green cardamoms
- 4 cloves
- 1 small cinnamon stick
- 1 teaspoon salt
For the Biryani
- 2 tablespoons oil
- 1 tablespoon ghee
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- ¼ cup chopped mint leaves
- ¼ cup chopped coriander leaves
- A pinch of saffron soaked in 2 tablespoons warm milk (optional)
Instructions
Step 1: Marinate the Chicken
Mix the chicken with yogurt, ginger-garlic paste, lemon juice, turmeric, red chili powder, coriander powder, garam masala, and salt. Let it marinate for at least 30 minutes. For the best flavor, marinate for 2 hours or overnight in the refrigerator.
Step 2: Cook the Rice
Wash the basmati rice until the water runs clear. Soak it for 20 minutes.
Bring water to a boil and add bay leaves, cardamoms, cloves, cinnamon, and salt. Add the soaked rice and cook until it is about 70–80% done. Drain and keep aside.
Step 3: Cook the Chicken
Heat oil and ghee in a large pot.
Fry the sliced onions until golden brown. Remove a small portion for garnishing.
Add the remaining onions, green chilies, and tomatoes. Cook until the tomatoes soften.
Add the marinated chicken and cook for 12–15 minutes until the chicken is nearly cooked and the masala becomes thick.
Stir in half of the mint and coriander leaves.
Step 4: Layer the Biryani
Spread the partially cooked rice evenly over the chicken.
Top with the remaining mint, coriander, fried onions, and saffron milk (if using).
Cover the pot with a tight-fitting lid.
Cook on low heat for 20 minutes.
Turn off the heat and let the biryani rest for 10 minutes before opening the lid.
Step 5: Serve
Gently fluff the rice with a fork and serve hot.
