Ingredients
- 6 eggs, boiled and peeled
- 3 cups fresh spinach (palak)
- 2 medium onions, finely chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies
- 2 tablespoons oil or ghee
- ½ teaspoon cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- ½ teaspoon garam masala
- Salt to taste
- ½ teaspoon kasuri methi (optional)
- 2 tablespoons fresh cream (optional, for a richer curry)
Instructions
Step 1: Prepare the Spinach
Wash the spinach thoroughly. Boil it for 2–3 minutes, then transfer it immediately to ice-cold water. Blend the spinach with the green chilies into a smooth puree.
Step 2: Prepare the Eggs
Lightly make small cuts on the boiled eggs. Heat a little oil in a pan and fry the eggs with a pinch of turmeric and salt until lightly golden. Set them aside.
Step 3: Cook the Masala
Heat oil in the same pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for a minute.
Add the tomatoes and cook until they become soft. Mix in turmeric, coriander powder, red chili powder, and salt. Cook until the oil begins to separate from the masala.
Step 4: Make the Curry
Pour in the spinach puree and cook on medium heat for 6–8 minutes. Add a little water if the gravy becomes too thick.
Add garam masala and crushed kasuri methi. Stir well.
Step 5: Finish the Dish
Place the fried boiled eggs into the spinach gravy and let them simmer for 5 minutes so they absorb the flavors.
For a richer finish, stir in fresh cream just before serving.
